What spices/ingredients do you need to use to make Chinese noodles the way they make it in restaurants ?

I've tried soya sauce , cumin , tumeric , ginger , basil , rosemary , origano etc... and NOTHING comes close to the taste of those delicious noodles they serve in Chinese restaurants...HELP ! Many Thanks !

Try cooking the noodles at high heat. Use safflower, canola or peanut oil, since those oils have a higher smoke point for your stir-frying. Olive oil is too delicate and also has too much flavour.



Soya sauce is standard, but you could try black beans or oyster sauce as well. If you want spices, try five spice powder or some hot peppers. Fresh garlic and ginger are also nice.



Make sure you're getting your ingredients from your local Asian supermarket and ask one of the staff to check that you're getting the right stuff.

Reply:Dude, try dark mushroom soy sauce and Oyster sauce with sugar, and add corn starch solution to thicken it at the end.
