What's the best way to dry fresh herbs?

Just cut a TON of Rosemary %26amp; Thyme from the garden b4 the weather gets too cold. What's the best way to preserve? I'd like to dry some and keep a few fresh stems as well for cooking during the next couple of weeks.

Herbs should be picked in the early morning, then bunched together and put in a dark, warm environment and left alone until they are dry.

If I have a lot to do I put them on a screen in my second bathroom, which never gets used, and just leave them. Otherwise, I put them in my storage room hanging in bundles from a short clothesline I've put in there.



It's easy, and preserves the oils in the herbs. I do not recommend oven drying because you run a good risk of heating the volatile oils right out of the herbs.

Then take them off the stems and package them in baby food jars or recycled herb jars, and date them.

Reply:tie them into a bundle, wrap them loosely with a paper towel, and tie them to a hanger. hang them ina warm (but not humid) dark space, such as a... you guessed it, closet! leave them until they are dry. try not to touch them with bare hands as it puts skin oils on the herbs and inhibits the drying.
