Raw strips of chicken marinating for 12 hours?

A recipe I am making calls to marinate strips in garlic, lemon juice and rosemary for 2 hours. But I leave my house at 5am and get home at 5pm. Is it safe to marinate it for that long? Sorry...always been a lil scared off by raw chicken!

It is fine. I bet it will taste even better with it marinating all day.
Reply:there are many recipes calling for 24 hour marinated chicken such as in Indian recipes where you marinate in lemon juice, garam masala, ginger, garlic, joghurt overnight. It makes the chicken tender and moist ((well as long as you don't over-cook it)).

Reply:its fine...all the flavors will be soaking in..dont worry!! just cook it well and make sure it stays refrigerated until u cook it

Reply:You'll be perfectly fine. As a matter of fact, the acid from the lemon juice helps preserve the chicken a little bit. When you get home you will notice the chicken has turned white. This is perfectly normal. You'll be able to take three or four minutes off your cooking time because of the curing.
Reply:It's perfectly safe. I marinate chicken all day about half of the time, just because of the convenience of it. The only reason they tell you to do it for 2 hours is that is the minimum amount of time it'll take the chicken to soak up the flavor. The longer you leave the chicken, the more flavor it will have.



Some say that it's possible to "over" marinate food, but, I have never had a piece of chicken, or steak that was "over" marinated.

Reply:From my experience in marinading in a very similar marinade I found the flavors almost over powering,When I left them to get aquainted all day. So if you can get home at 5 have your chicken and marinade seperate but ready to do and speed marinate for 1.5 hrs, this will give the flavor you require for the recipe with out being so strong you dont want ot eat it.
Reply:Yes, as long as it's refrigerated, your marinated chicken will be just fine.
