What should I do with this leftover lamb tonight?

I made a 7 lb lamb leg roast day before yesterday (marinated and cooked in honey/dijon mustard/rosemary/garlic/salt/pepper/lemo... zest) . Yesterday we made gyros with tzaztiki (i have no idea how that's spelled) sauce.

What should I do with it tonight?

Something unique with common ingredients if possible.

Reply:Lamb is tuff the second night for some reason - the only thing I can think of is make a soup - chicken broth add some veggies then add the lamb. or put it in orzo and lots of grated cheese...
Reply:You have got the key to a great leftover dinner for tonight .all you need to do is cut the lamb into chunks put thru a food processeruntil course chopped up .peel and boil some spuds .combine lamb with frozen peas , corn ,carrots,(packet mix )or what frozzen veg you got . add a good slash of tommy,worcestershire, sauce . top with mashed spuds. topwith a little cheese. bake in medium oven. 30min

Reply:This is an accidental one I came up with using leftover veal piccata (lemon, garlic, capers, white wine). I cut it up and put it in an alfredo sauce and it worked so well.



Get a jar of Classico roasted garlic alfredo, some half and half, and Parm, asiago, and Romano, and a package of sliced baby bella mushrooms.



Saute the mushrooms in butter with a lot of garlic. Then add the jar of sauce, add some half and half to the jar, shake, and add to the sauce. Add a couple good handfuls of shredded cheeses to thicken. Add the cut up meat and heat through. Serve over pasta with more cheeses, pepper, and chopped cilantro. I bet it would work with your lamb.

ingredients

8 oz (225 g) rich shortcrust pastry

175 to 225 g (6 to 8 oz) lean cooked lamb, diced or coarsely minced

2 teaspoons chopped fresh mint

1 tablespoon grated onion

salt

pepper

2 oz (50 g) peas, cooked

2 to 3 tablespoons cream

beaten egg to glaze



method

1. Roll out the dough and cut into four 18 cm (7 inch) rounds.



2. Mix together all the remaining ingredients except the beaten egg and divide between the dough rounds.



3. Dampen the edges, bring them together and press firmly to seal. Crimp.



4. Place on a greased baking sheet and brush with beaten egg.



5. Bake in a preheated hot oven 220°C (425°F) Gas Mark 7 for about 25 minutes or until golden brown.



6. Cool on a wire rack.

Coconut milk, curry powder, green peppers and chicken broth. Let it all simmer for a while and serve over rice.
