What kind of food should I serve?

I'm throwing a party with a Caribbean theme and giving away a cruise to the Bahamas as the "mega door prize." We're having rosemary mint pedicures and peach manicures. What kind of tropical/Caribbean light refreshments would be good to serve at this kind of event?

Reply:If you are serving alcoholic drinks ( or any drink would work I guess ) then make sure they all have umbrellas and a pineapple and cherry garnish. Caribbean food consists of lots of seafood and jerk spices. Here are some websites to check out for recipes:

Reply:How about Rum Balls? No, they' probably be a better dessert. There's a recipe for them in Peach Cobbler Murder.

Reply:Hollow out a watermelon and put fresh fruit in it. Cube up pineapple and alternate marashino cherries on a wooden skewer. Some spicy nuts would be nice to have around too - make sure you have macadamia nuts too.



If you want to serve a meat, try marinading some chicken tenders in a teriyaki sauce and grill on skewers. (Soak the wooden skewers before grilling to prevent them from burning too quickly) When they are done, keep them on the skewers and stick them out of a pineapple for a cool display.



Another idea, cut a cantelope in half and fill with chicken salad.

Reply:I would serve a fruit tray with kiwi, oranges, mangos, papaya, and sliced fresh pineapple. You can make a quick and easy dip for the fruit by adding 8 ounces of cream cheese to half a jar of marshmallow cream.



You could also serve a tropical chicken salad. Here's a recipe that I use.



3 cups cooked, cubed chicken

3/4 cup chopped celery

3/4 cup seedless grape halves

3/4 cup coarsely chopped macadamia nuts or toasted almonds

1 cup Tropical Salad Dressing (recipe follows)

Lettuce leaves

Strawberries, kiwi, avocado and toasted coconut, to taste

In large bowl, combine chicken, celery, grapes, nuts and dressing. Cover; chill to blend flavors. Serve on lettuce with strawberries, kiwi and avocado slices, as desired; sprinkle with coconut.



Makes 4 servings.



Tropical Salad Dressing

1/2 cup cream of coconut

1/3 cup red wine vinegar

1 teaspoon dry mustard

1 teaspoon salt

1 clove garlic

1 cup vegetable oil



In blender or food processor, combine all ingredients except oil. On low speed, slowly add oil, blending until smooth. Store in refrigerator.



Tip: You also can serve Tropical Salad Dressing with fruit or mixed green salads.



Makes about 2 cups dressing.
