I was thinking of oven roasting some potatoes, anyone know any good recipes?

I have done them with olive oil and rosemary before, but I thought they were kind of boring.

Oven Roasted Potatoes

1 1/4 lbs red potatoes, each cut into eighths

1/2 teaspoon dried thyme

1/8 teaspoon salt

1/8 teaspoon pepper



# Coat dish with cooking sprat and add potatoes skin side down.

# Spray lightly with spray.

# Sprinkle on seasoning.

# Roast for 40 minutes

Greek Potatoes (Oven-Roasted and Delicious!)

8 large potatoes, peeled,cut into large wedges (about 6-7 wedges per potato)

3 cloves garlic, minced

1/2 cup olive oil

1 cup water

1 tablespoon oregano (get the mediterranean - it's the best!)

1-1 1/2 lemon, juice of (this is personal preference and depends on how juicy your lemons are)

sea salt

fresh coarse ground black pepper







1. Preheat oven to 440F.

2. Put all the ingredients into a baking pan large enough to hold them.

3. Season generously with sea salt and black pepper.

4. Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.

5. The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.

6. Bake for 40 minutes.

7. When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.

8. Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.

9. This will take about another 40 minutes.

10. Do not be afraid of overcooking the potatoes- they will be delicious.

11. Note: I often melt a boullion cube in the water; if you do, make sure to cut back some on the salt.
Reply:This recipe is not really for roasted potatoes but we love it. I scrub potatoes and lay them on a separate piece of tin foil. thne lay a piece of bacon on top one way and another slice of bacon the other way. Wrap all up in foil and bake for one hour at 350. Yummy!! Serve with sour cream or my favourite, cottage cheese!
Reply:HIGHLY reccomend these roasted honey dijon potatoes. Here is the recipe-



1 lb potatoes, cut into 1 inch pieces

1 small onion, thinly sliced

1/4 cup Dijon mustard

1/4 cup olive oil

1-2 teaspoon honey

1 tablespoon chopped fresh parsley

salt and pepper

Set oven to 375 degrees Mix together mustard, honey, oil and salt and pepper Mix together potatoes and onion slices Pour the sauce over potato/onion mix, until well coated Place in a greased baking pan.

and bake for 35-40 minutes, or until potatoes are tender Sprinkle fresh parsley over potatoes;
Reply:Olive Oil, Balsamic Vinegar, Thyme, 1T mustard, salt %26amp; pepper.

Toss w/vegetables.

Roast for 400, covered for 45 M.,

Toss after 30M, uncover last 10-15M.

Reply:Use your olive oil and rosemary, plus some chopped garlic, seasoned salt, and sprinkle with balsamic vinegar. Roast at 400 until they are tender.
Reply:hey do both russet and sweet potato wedges.



Then afterwards toss them in salt, pepper, fresh herbs, and shaved parmesan cheese.

1 1/2 lbs fingerling potatoes, Sliced lengthwise in 1/2

3 ounces bacon, diced

3 ounces onions, sliced

1-2 garlic clove, minced

3 fresh sage leaves, minced

1/2-1 teaspoon coarse salt or seasoning salt (Crazy Salt)

Preheat oven to 425 degrees.

Place all ingredients in a roasting pan.

Place in oven for 15 minutes.

Toss all ingredients and roast for 15 more minutes. Roast till fork tender and crisp!
