How to make mushroom sauce with what I have?

I'm making prosciutto and basil mozzarella ravioli and tired of always using a red sauce so I thought I would try something new. Problem is that I don't have milk or heavy cream, is there a recipe that uses cream cheese or sour cream? I have white wine, onions, garlic, chicken stock, rosemary and thyme. Help me please, I'm starving! lol

Reply:Yes. Use all the things - I hope you have the mushrooms! Sour cream is fine! We use this in Latvian cooking instead of cream.
Reply:Use creme fraiche if you have any of that. It's similar to sour cream I suppose, so that may work.



Simple mushroom sauce as follows.



Sweat some chopped garlic in olive oil, add chopped mushrooms and fry gently. Add salt and freshly ground black pepper, a small amount of chopped fresh rosemary and a small amount of stock or white wine. Simmer for a few minutes, add single cream or creme fraiche and stir through, simmer for a few more minutes.

Job done.

Reply:if you have some flour and some butter make a basic white sauce using the chicken stock and cream cheese flavour it with some garlic few herbs and some seasoning to taste add chopped mushrooms lightly fried, heat stirring all the time ,I'm assuming you know the basics of cooking
Reply:saute the mushrooms with a little garlic and thyme, salt and pepper, and a good amount of olive oil (that will carry the flavours and be the sauce).

that's all you have to do.



when you have cheese inside the pasta, aside from parmigiano..any cheese on the outside is overkill.

the mozarella inside isn't a filler it's there for the subtle cream flavour and the creaminess of it.

Personally I would do a bit of experimenting.

Fine chopped onion and garlic fried in a little butter with a pile of mushrooms and chicken stock added and then simmered for 10 minutes finally adjusting seasoning and then thicken with some cornflower. I can almost taste it.

6 Fresh mushrooms, sliced

3 Green onions, diced

1 tablespoon Dry sherry

1 teaspoon Light miso
