Do sweet potatoes discolor from oxidation?

I want to prep my sweet potatoes tonight. I will cut them into large chunks, coat them in e.v. olive oil, fresh rosemary, %26amp; Kosher salt %26amp; roast them tomorrow. If I just cut them tonight, will they turn brown? I've never prepped them this far ahead.
Do sweet potatoes discolor from oxidation?
cut them, put in water and finish tomarrow, they will turn brown.
