Anyone have a recipe for foccacia?

I have rosemary and sea salt to put on it...
Anyone have a recipe for foccacia?

Ingredients:



3-1/4 unbleached flour

2 tbsp. fast rising yeast

1 tsp. salt

3 tbsp. extra virgin olive oil, plus a little for brushing

1-1/4 cups warm water (more or less)

Sea salt, to taste



Directions:

In a large bowl combine the flour, yeast and salt. Using a wooden spoon, stir to mix well. Add olive oil. While stirring, add the warm water until all of the flour absorbs and a dough forms. You may need more or less of the water. Gather dough into a ball and transfer to a floured work surface. Knead until soft and elastic, not sticky, about 10 minutes.



Place dough in a lightly oiled and warmed bowl, turning several times to coat it with oil. Cover with plastic wrap and let rise in a warm place till doubled, around 45-75 minutes.



Position rack on lower part of oven and preheat to 400°F. Brush a 10x15 baking pan with olive oil and set aside. Punch down dough and transfer to foured surface. Knead a few times and let rise for 5 minutes. With palms form into a rectangle about 4x8 inches and transfer into pan. Stretch and pat the dought to fit pan completely end evenly. Cover with plastic wrap and let rise about 1 inch (30 minutes or so).



Using fingertips, make 'dimple' indentations in the dough about 2 inches apart. Brush surface with olive oil and sprinkle with sea salt. Bake till golden brown, about 30-40 minutes.



Let cool for a few minutes, cut into squares and serve warm. Before baking, you can also add roasted red peppers. It's absolutely delicious.

9 tablespoons olive oil (divided use)

3 cups unsifted all-purpose flour

3/4 cup unsifted semolina flour

1/2 teaspoon salt (divided)

1 1/2 tablespoons fast-rising active dry yeast

1 1/2 cups hot milk (between 120 and 130 degrees)

1 tablespoon fresh rosemary leaves



Pour a scant tablespoon of the olive oil into a 9"-square cake pan; spread evenly to cover bottom and sides.

Place all-purpose flour, semolina flour, 2 tablespoons of the olive oil, 1/4 teaspoon of the salt and all of the yeast in the bowl of a mixer fitted with a dough hook.

(The mixing can be done by hand as well.) Blend ingredients on medium speed.

Reduce speed to low and slowly add.

hot milk.

Raise the speed to medium and continue mixing for 5 minutes (knead about 8 to 10 minutes by hand).

Sprinkle bottom of cake pan with a little flour.

Remove dough from bowl and spread out evenly in pan.

Cover with a towel and let rest for 30 minutes.

Preheat oven to 400 degrees.

Remove towel.

Brush dough with 1 to 2 tablespoons of the olive oil.

Sprinkle top with additional salt and.

rosemary.

Bake for 20 minutes.

Remove from oven and drizzle with remaining oil.

1 1/2 tbsp. yeast

1 c. warm water (105 to 115 degrees)

2 tsp. salt

1/3 c. oil

1 tsp. sugar

3 c. flour



Dissolve yeast in water. In large bowl combine salt, sugar and oil. Add yeast water; stir until salt and sugar are dissolved. Stir in 2 cups flour until mixture is smooth. Add 1 cup flour; knead 5 minutes. Raise in greased bowl 30 to 60 minutes.

Can cut in half to make 2 small loaves or make 1 large loaf. Shape into circle on greased cookie sheet about 1 inch thick. Dimple with end of wooden spoon. Drizzle with olive oil. Sprinkle with cheese. Bake in 400 degree oven for 25 minutes.

INGREDIENTS:

3 1/2 cups all-purpose flour

1 teaspoon white sugar

1 teaspoon salt

1 tablespoon active dry yeast

1 cup water

2 tablespoons vegetable oil

1 egg

3 tablespoons olive oil

1 teaspoon crushed rosemary



DIRECTIONS:

Combine 1 cup flour, sugar, salt, and yeast. Mix well. Heat

water and vegetable oil until warm, and add to yeast mixture

along with the egg. Blend with an electric mixer at low speed

until moistened. Beat for 2 additional minutes. Stir in 1 3/4

cup flour while beating, until dough pulls away from side of

bowl. Knead in 3/4 cup flour on floured surface. Cover dough

with a bowl, and let sit for 5 minutes. Place dough on a

greased baking sheet. Roll out to 12 inch circle. Cover with

greased plastic wrap and a cloth towel. Place in a warm place

for 30 minutes. Uncover dough, and poke holes in it with a

spoon handle at 1 inch intervals. Drizzle olive oil on dough,

and sprinkle with crushed rosemary. Bake at 400 degrees F

(205 degrees C) for 17 to 27 minutes, until just golden.

Remove from baking sheet, and cool on rack.

7 1/2 cups flour

1 1/2 Tbsp. yeast

1 tsp. black pepper

1 tsp. red pepper flakes

2 Tbsp. Italian Seasoning

1 Tbsp. granulated garlic

3 cups very hot water



Combine all ingred. Knead with dough hook for 10 min. Let double in size. Punch down. Place on greased jelly roll pan. Let rise again. Puncture with fingers, brush or spray with olive oil. Sprinkle with salt and Parmesan. Bake for 20 min. at 425*. Cool on wire rack.
