Hi Kim, this recipe is for Deli Rye bread, it makes a 2lb loaf.
1 cup buttermilk, 2tbsp water, 1 1/4 tsp salt, 1 large egg, 1 tbsp veg. oil, 2 tbsp molasses, 2 cups all purpose bread machine flour, 1 1/2 cups rye flour, 1 1/2 tsp gluten flour, 1/4 tsp baking soda and 1 1/2 tsp quick-rise yeast.
Measure and add liquid ingredients in bread pan.
Measure and add dry ingredients (except for yeast) into pan
Use finger to form a well (hole) in the flour
Put yeast in hole (be sure it dosen't touch any liquid)
Close lid and select Whole Wheat setting,
Press crust colour (light, med, or dark)
Press start.....and wait for your bread.

Place ingredients into the bread machine in order suggested by the manufacturer.
Use the whole wheat, regular crust setting.
After the baking cycle ends, remove bread from pan, place on a cake rack, and allow to cool for 1 hour before slicing.
And here's one for Rosemary Bread...
1 cup water
3 tablespoons olive oil
1 1/2 teaspoons white sugar
1 1/2 teaspoons salt
1/4 teaspoon Italian seasoning
1/4 teaspoon ground black pepper
1 tablespoon dried rosemary
2 1/2 cups bread flour
1 1/2 teaspoons active dry yeast
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select white bread cycle; press Start.
I'm curious to see how the Rosemary turns out, it sounds wonderful!!
Reply:The ones I have are by - Donna Rathmell German. The Bread Machine Cookbook and then II. The first one is really the best as it gives recipes for unusual grains.
The only problem I had was my machine broke down before the books wore out.

This recipe calls for both rosemary and red wine:
Braised Lamb Shanks With Fresh Rosemary
6 lamb shanks (I have also used leg of lamb, ask the butcher to cut it in 1 1/2 in. slices or use a cut-up boneless)
2 tablespoons olive oil
2 medium onions, chopped
3 large carrots, peeled and cut into 1/2 inch thick rounds
10 garlic cloves, minced
1 (750 ml) bottle dry red wine (Sangiovese is good)
1 (28 ounce) can diced tomatoes with juice
1 (14 1/2 ounce) can low sodium chicken broth
1 (14 1/2 ounce) can beef broth
5 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 teaspoons grated lemon zest
Sprinkle lamb with salt and pepper.
Heat oil in heavy, large pot over medium-high heat.
Working in batches, add lamb to pot and cook until brown on all sides, about 8 minutes.
Transfer to bowl.
Remove all but about 2 tablespoons of oil from pan.
Add onions, carrots, and garlic to pot and sauté till golden, about 10 minute.
Stir in all remaining ingredients.
Return lamb to pot, pressing down to submerge.
Bring liquid to boil, reduce heat to medium low, and cover.
Simmer until meat is tender, about 2 hours.
Uncover pot; simmer till meat is very tender, about 30 minutes.
(Can be made 1 day ahead. Chill until cold, cover, and keep chilled. Rewarm over medium heat before continuing.) Transfer lamb to platter; tent with foil.
Boil juices in pot till thickened, about 15 minutes.
Season with salt and pepper and spoon over lamb.

Herb gardeners Please Help me?
I have been growing some herbs that started as seeds last February. They are all straggly. I pinched back the basil already because I found instructions here on how to do this. I also have:
Thyme (in ground)
The rest are potted.
Dill
Cilantro
Italian Parsley
Chives (not doing well, only two stalks)
Marjoram
Basil
The birds ate my Rosemary. Bad birds.
These are mostly all outside in pots. I have some in pots still inside. Of course, I've never done this before.

All of your plants, EXCEPT the cilantro, need more sun and warmth. Next year, I would not start the seeds quite so early. If you planted them in March or April, they would be ready to go outside (late April or May) when it starts to warm up in NYC.
Cilantro is the only plant listed that likes cool weather. You might try sowing some seeds again in the fall. Then they will have cool weather as they grow.
Parsley takes a LOOONNNGG time to grow from seed. It usually takes about a month to sprout!! I always grow mine from seedlings!
Chives take awhile to get going also. Put them in a sunny spot and keep watering. My onion chives are blooming now (in the ground in California)--- very lovely purple. I think that they will grow outside in the winter in your area, but you might want to put them in a protected plant and cover them.
Thyme, marjoram, chives and rosemary are perennials. They like sun and heat in the summer, but will overwinter. The marjoram will LOOK like it has died off, but it will return the next year.
Dill, cilantro, parsley and basil are all annuals and will have to be planted again next spring. (Hint: let your plants go to seed at the end of the season and save the seeds for next year).

What's the scarier movie.....The Exorcist, The Omen OR Rosemary's Baby?
The Exorcist by far -- scared the hell out of me, and can you imagine being a 9 year old and watch something like that in the middle of the night? I was scared to the point of not being able to sleep well for weeks! And I think the part where linda blair used the crucifix to "you know" is just beyond repulsive! I'll never ever watch that movie ever again as long as I live.

Most of the ones you listed can be found fresh at your local supermarket. You can actually grow a small herb garden this time of year with some good lighting and a warm window sill. You should be able to find all of these in dried form, although I would pass on the dried chives and the dried parsley. These two don't maintain their fresh flavors after they've been dried. Thyme, dill, oregano, mint and rosemary hold up really well after drying. Hope that helps!

Can anyone suggest a good way to prepare Tuna Steaks? my husband doesn't like rosemary, so that's out.

Because good grade tuna is such an expensive fish ( if you bought "Ahi") it should be eaten RARE only!
Also it shouldn't be masked with all kinds of sauces that will kill the taste of the Tuna.
Make it simple so he tastes the fish.
Coat the edges with sesame seeds and grill 30 to 45 seconds( depending on the thickness of the steak).
Teryaki on the side and that's it.
The tuna should be almost raw in the center( if you cooked it right).
And yes
It's Safe.

With the lobster a good New Zealand sauvignon blanc such as cloudy bay if you can get it or most from the marlborough district and with the lamb a lovely pinot noir. Again i would go for a New Zealand as they will not let you down and unfortunately some of the even classic french types can just when you need them to be good. Unless you really want to change keep on with the pinot noir for desert also it will work excellently with fruity cheesecakes. I wouldn't use a desert wine as i think it would be too cloying. p.s. how about an invite? I'm drooling!

For the main course, the asparagus poses the biggest issue. The strong, astringent character of asparagus will lay waste to subtle wines. I'd also shy away from complex wines. Even with a high buget, I wouldn't go overboard given all the very strong flavors. I'd consider a California Zin or an Aussie Shiraz, but get a brawny one.
I like the Sauternes idea for the dessert as well.

1/4 C. finely chopped cooked pancetta or ham (2 oz.)
1/4 C. grated Parmesan cheese
Directions
If using fresh green beans, cook in a covered saucepan in a small amount of boiling water for 20 to 25 minutes or until crisp-tender. Drain. Meanwhile, in a large saucepan cook pasta according to package directions, adding the mushrooms, frozen green beans (if using), and green onion during the last 4 to 5 minutes of cooking. Drain pasta and vegetables in a colander. Set pasta mixture aside. For sauce, in the same large saucepan stir together yogurt, flour, mustard, nutmeg, and pepper. Cook and stir until thickened and bubbly. Stir in pasta mixture, cooked fresh green beans (if using), and pancetta or ham. Heat through. To serve, sprinkle with Parmesan cheese.

Melt 3 Tbsp. butter in a small saucepan on Med-Low heat. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase the heat to Medium. Constantly stir with a whisk until mixture is thick and smooth.
Remove from heat and set aside.
Melt 2 Tbsp. butter in a 2 quart saucepan over Medium heat, add onions and cook until transparent. Add spinach and water to pan, lower the heat and cover. Stir several times until spinach is almost completely cooked.
When spinach is almost done, add white sauce, sour cream and Parmesan cheese. Stir well and simmer until completely blended.

Yup that sounds so good. I would make a coconut cilantro rice. You can use either plain white rice or a rice pilaf that had dried seasonings/herbs in it. I substitute unsweetened coconut milk with a little bit of chicken broth for the water when making the rice and then add the cilantro (toasted coconut if you like) at the end when it is done cooking. If you don't like cilantro you can use parsley. I would also go with like a mango or pineapple salsa with red onion, cilantro, red or yellow bell pepper, lime, little bit of garlic powder, salt and if you like it hot a jalepeno or habanero. Also fried plantains. Now my mouth is watering

Reply:3 pounds christophene, peeled, seeded and cut into cubes (can substitute chayote or any summer squash)
4 tablespoons butter
4 tablespoons flour
1 1/4 cups milk
1/2 cup grated Monterey jack or Cheddar cheese, plus 1 cup, for topping
1 onion, finely chopped
2 cloves garlic, finely chopped
1 teaspoon salt
1 tablespoon chopped celery
2 teaspoons prepared mustard

Fill a large pot with water and add a little salt. Bring the water to a boil, then add the cubed squash and cook until tender, about 10 minutes. Drain the cooked squash and set aside in a large, well-greased baking dish.

In a large saucepan over low heat, melt the butter. Slowly whisk in the flour and cook for 1 to 2 minutes, until the mixture is creamy and thick. I substitute unsweetened coconut milk with a little bit of chicken broth for the water when making the rice and then add the cilantro (toasted coconut if you like) at the end when it is done cooking. If you don't like cilantro you can use parsley. I would also go with like a mango or pineapple salsa with red onion, cilantro, red or yellow bell pepper, lime, little bit of garlic powder, salt and if you like it hot a jalepeno or habanero. How to grow herbs?
I have never gardened ever! but want some fresh herbs to cook with this summer. Where is the best place to buy seeds? Where should be be planted? how much do I water them?
I am wanting to plant thyme, rosemary, mint, parsley...just a couple of things. Any advice??
How to grow herbs?
Oh, if you love cooking you'll have a lot of fun with herbs. I've never grown anything from seeds before, but most of the herbs I have planted will self-seed as annuals (plants that die after a season).
For most kinds off cooking, you'll need rosemary, basil, oregano, thyme, parsley and sage.
Each of these needs lots of sun, so plant them in a sunny spot of your yard or keep them in a north-facing window of your house. Don't over-water them, just give them a drink now and then, keeping in mind that too much water will rot the roots.
When you transplant the plants (which should cost you about $1.50 per plant most places), massage the roots a bit after removing them from the container. This will help the roots spread once you plant them.
The rosemary and basil will likely be the first ones to show rapid growth. You can pinch rosemary stalks into whatever shape you want. Just cut what you need as you need it, but try to do it in the morning because trimming the plants at night can encourage disease.
The oregano tastes much better when dried. You can dry the leaves in a little baggie, or in the microwave. Sprinkle it on pasta and pizza.
The sage, parsley and thyme are good for soups, stews and slow-cooking dishes. Sage is the exception to the rule of putting the herbs in just before you're done cooking. Basil is just the opposite.
Herbs are great because they aren't too picky about growing conditions. Oregano especially will thrive even in poor soil. If you choose to plant any mint, keep in mind that it has a habit of taking over gardens, so harvest it regularly and treat yourself to some mint tea! Dried mint brews better than fresh, but you can make a mean mojito with fresh mint.

I bought some potting soil, put in a pot and buried the roots. I water when it appears to be dry. Herbs, from what I've read, appreciate full sun. Herbs are generally relatively easy to grow, and can be grown either outside in a garden or inside in containers (flower pots, empty yogurt cups with drainage holes poked in the bottom, etc.) If you buy the seeds in a packet, there should be growing instructions on the package somewhere. I have also seen, although nowhere near as often as the seeds, pre-started herbs grown in little containers. Those tend to cost a little more than seeds, but instead of planting and all such work, with those the plant is already there and you just have to use it and try to keep it alive. I hope this helps.

Even easier would be to get a shovel and loosen up some decent soil to 8 or 12 inches in a sunny spot and plant away.

Do you want it to be organic, or will you use pesticides and chemical fertilizers? And, what kind of soil do you plan to work: clay, sandy or loamy?
My recommendation for a first time gardener is to test your green thumb. Which really means to test your level of commitment. It would be a shame if you went through a whole lot of work to later decide that it's not for you.
Try container gardening first. Pick up some containers, some good quality potting soil, fertilizer (I swear by 'Alaska Fish Fertilizer' and 'Alaska More Bloom') and a small bag of vermiculite. Mix up the dry ingredients and fill your pots to about 2" from the top. Place your seeds. Cover with a layer of dry planting mixture, and gently pat down. Then, start watering.
If you want to start out bigger, you can choose a plot of land for your garden. You'll need to ready the soil. Good soil amendments make or break a garden.
Garden placement (whether container or plot) should be near a water source. If it's too far from your spigot, you're more likely to forget to water.
Once your soil is prepared, purchase good quality seeds and plant them. Growing from seed requires consistent moisture levels until the seeds sprout. So, you'll need to water every day, at least once per day depending on your climate.
Any specific questions you can address with a local nursery. It's in their best interest to create a repeat customer in you. So, do let them know that you're a beginner. I believe you'll be amazed at how helpful the staff will be.

Pound the rosemary lightly to release the aroma, then add one cup boiling water. Steep, covered, to desired strength. This is "drinking strength" tea -- if you are going to use it on the skin, you may want to make it stronger.
Although rosemary is a "good for what ails you" all-purpose herb, I am not familiar with using it as a treatment for skin infections. Perhaps oil of rosemary (which should not be used internally) would be better??

i was thinking of making a ratatouille/ goat cheese tian w/ rosemary for dinner and then having a parfait style pear tapioca with passion fruit coulis. im just worried about how well it will all fit together. what do you think?please use a gourmet cooking perspective when answering

I think each dish sounds delicious, and that they go well together. Is the tian the main entree, or are you doing a meat as well? If this is for a formal dinner you should have 2-3 more side dishes on the menu, though :)

Apparently, josef fritzl's wife and other members of the family did not know what was going on for decades.
I find this unbelivable that his wife did not know.
How do you think this could be?

B. She was suspicious and didnt know how to speak to the authorities.

D.Psychologically in denial that her husband could do such a thing - continued to play the role of traditional housewife

I know if it was my mum or any other mum, if their 18 year old daughter went missing, with an explaniatory note or not, they would look until the end of the earth until they find the child and seeing as she obviously didnt, shows that Fitzl must have influenced her in some way.

She refuses to entertain these as possibly true.
So I can understand how Josef Fritzl's family convinced themselves that there was nothing wrong. I'm glad this has come out and I hope it will allow us to examine our own games of denial, and decide if there is anything we can do to ease someone else's suffering.

I have tried both of these recipes and I love both!! Hope you like: The first one you can do in a skillet, the other is for the oven, but the recipe is sooo good I thought I would share anyways...
Lamb Chops with Balsamic Reduction
1/4 teaspoon dried basil
1/2 teaspoon dried thyme
salt and pepper to taste
4 lamb chops (3/4 inch thick)
1 tablespoon olive oil
1/4 cup minced shallots
1/3 cup aged balsamic vinegar
3/4 cup chicken broth
1 tablespoon butter
In a small bowl or cup, mix together the basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

Preheat the oven to 400 degrees F (200 degrees C). Allow the lamb to stand at room temperature while the oven preheats.
Roast uncovered in the preheated oven to your desired degree of doneness, about 20 minutes for medium, or 30 minutes for well done. Garnish with a sprinkle of cilantro and squeeze lemon and lime juice over the top before serving.

I have an indoor herb garden consisting of Rosemary, Tyme and Parsley. I planted them a few weeks ago but they don't seem to be growing, in fact they seem to be dying. They have a good amount of sunshine and water, but they also sit in front of my air conditioner that runs constantly at 70. could this be whats killing them?

Dang good book, I would recommend it to anyone, I would not say that there is a bunch of vulgar words, but satanic and strange....I thought about reading the sequel book, but I don't know if it will be as good, didn't it take her like 15 years to write it?

Reply:I think it's a sweet name for a herb. I grow it myself and use lots of it. Why not call her Thyme, or Oregano,. Mint has a tang to it. I love the name Basil, but oops, that's a boys name. Then again, is it?
